Our 2010 survey of farmers' markets in the eight counties of Western New York turned up lots of new offerings.

There's natural pork in Williamsville this season, and goat milk soap in Hamburg. There's a whole new market in Wellsville.

Among the perennials: the fact that practically nobody goes to a farmers' market without a motive. The deal-driven find their dollars go further when they can barter with growers. The freshness-obsessed find fruit and vegetables picked hours earlier. Local business supporters get to put their money where their mouth is, and feed their families.

At the Angelica Farmers' Market in Allegany County, regulars have another motive: buckwheat pancakes and extra-thick bacon.

"Every Saturday, an hour before the market opens, we start cooking bacon in the middle of Park Circle in downtown Angelica," said Lucia Beer, who runs Catbird Griddle with her husband Sam. When the crowd has been whipped into a frenzy of hunger, they unleash the pancakes.

The Beers started selling buckwheat pancakes with hot buttered maple syrup, a scoop of fresh fruit and whipped cream at the Saturday market last year. They sold like — well, let Beer, a registered nurse with a passion for locally sourced food, tell it:

"We thought we'd sell $100 worth," she said. "We sold $500 worth."

New this season: The Catbird Griddle's takeout salads and frozen dinners for two.

How about the $6 "Sinful Salad": greens from the Beers' farm, homemade vinaigrette, crumbled local bacon, croutons, grated Cuba cheese and a crusty hunk of regular or lavender French bread. Or freshly frozen dinners for two from $9 to $15, like locally produced ham, ramps and mashed potatoes.

If you drag the kids to Angelica, know that Beers has been known to pour pancake animals, puppy dogs and kitty cats with chocolate chip eyes, while they watch.

Check out listings for the markets nearest you, or ones that might be worth a longer drive. Note that many markets have free entertainment or classes scheduled, so check their Web sites for details we couldn't fit here.
