A preliminary study by University at Buffalo researchers suggests that eating mushrooms has a beneficial effect on how individuals regulate glucose levels in the body.

The effect was particularly strong in women.

“Our results indicate that consumption of mushrooms could be useful in regulating glucose levels,” said co-author Peter Horvath, associate professor in the Department of Exercise and Nutrition Sciences. “This alone may benefit individuals attempting to lose weight and who want to exercise for a longer time.”

The study was funded by UB. It was published in the April edition of The Journal of the Federation of American Societies for Experimental Biology and was reported at the recent Experimental Biology meeting in San Diego, Calif.
