Making Sponge Candy
The sponge candy center is a cooked syrup of sugar and corn syrup that is mixed with baking soda causing it to raise somewhat like bread. When it cools and sets, the "loaf" has an outer hard crust with an inside that is light with a melt-in-the-mouth texture.
