Fans of goat milk in all its forms – raw, pasteurized, cheese, yogurt – have started to notice Castle Farms, a small farm in Brant with a big menu of products.

Customers buy milk at the farm (1051 Route 249, Brant, 549-3282), and cheese and yogurt at farmers’ markets.

“Right now we’ve got 76 goats, and we’re milking 32 of them, getting about 15 gallons a day,” said George Castle, a former truck driver. He mostly takes care of the goats, a mixed batch of LaManchas, Saanens and Alpines. His wife, Pat, mostly takes care of the milk.

“We just started making yogurt, too,” George Castle said. “We just brought it out and people went crazy over it.”

So far the flavors have included blueberry, cherry and strawberry, with a dollop of fruit pie filling in the bottom you can stir up with your spoon. Single 5.5-ounce cups with fruit are $2; 9 ounces plain, $3, with fruit, $3.50; and 32-ounce plain quarts, $9.

The Castles are at the Williamsville and Bailey-Clinton markets on Saturdays, Riverside and Lancaster on Sunday, and the Downtown Country Market on Main Street on Thursdays. (Castle Farms’ ricotta, basket cheese, farmers’ cheese and herb spread are also available at the Lexington Co-op.)

People like their products because “it’s all-natural whole milk,” said Castle. “We put nothing in it and take nothing out of it.”
