Banana Bites

1 medium-large banana

4 heaping tablespoons reduced-fat whipped topping

2 tablespoons peanut butter

14 to 16 chocolate chips

What to do:

1. Slice banana into 14 to 16 rounds.

2. Mix together whipped topping and peanut butter until well-blended.

3. Put a small dollop of mixture on top of each banana round.

4. Top each with a chocolate chip.

5. Chill in refrigerator for one hour before serving.

Crunchy Edamame

Healthy edamame (ed-uh-MAH-may) provides a good dose of protein to fuel your winter fun.

1 (16-ounce) bag frozen shelled edamame (soybeans)

1 tablespoon olive oil

1 tablespoon fresh lemon juice

∑ cup grated parmesan cheese

salt and pepper to taste

What to do:

1. Thaw frozen edamame by rinsing with cold water in a large colander.

2. Dry edamame with paper towels, then place in a 9-by-13-inch baking dish.

3. Blend olive oil with lemon juice; drizzle over edamame.

4. Sprinkle cheese evenly over the soybeans and salt and pepper to taste.

5. Bake in a 400-degree oven for 15 minutes until cheese melts.

Good Luck Black-Eyed Pea Salsa

1 (15.5-ounce) can black-eyed peas

1 (15.5-ounce) can pinto beans

1 (15.5-ounce) can black beans

1 (11-ounce) can white corn

1 (2.25-ounce) can sliced black olives

1 cup mild chunky salsa

1 medium green pepper, chopped

1 (7-ounce) packet powdered Italian dressing

½ teaspoon garlic salt

What to do:

1. Drain and rinse cans of peas, beans, corn and olives. Place in large bowl.

2. Add salsa, chopped green pepper and remaining ingredients. Mix well.

3. Serve with multigrain chips.
