Carol DeNysschen, 49, is associate professor in the Dietetics and Nutrition program at SUNY Buffalo State. She also teaches spinning classes at 6:15 p.m. Wednesdays at the Southtowns Family YMCA.
What do you preach when it comes to healthy eating?
If you really like something, have some of it, but don’t have a huge portion. It’s the exercise piece, too. You’ve got to incorporate physical activity and healthy eating.
What are the staples of your diet?
I believe in very basic foods. Old-fashioned oatmeal is a great breakfast food. I believe in fruits and vegetables. I’m big on rice and potatoes and fish or meat or dried beans. There’s tons of things you can do with plant protein.
Your favorite healthy food?
I’m a nut about grapes. I find they’re easy, I can throw them in my bag and eat them on the go. I like to promote apples, especially to kids. They fill you up, have lots of good antioxidants.
