Food trucks need to pay some fees

“If you wanna have a dance, you gotta pay the band.” This old saying, I feel, figures into the food truck dilemma in the Village of Williamsville.

The casual diner is oblivious to the kinds of expenses and restrictions of keeping a restaurant afloat. For openers, architect’s plans and code and zoning laws must be met. New York State Liquor Authority forms, which are arduous and complicated at best, must be updated with any structural changes such as outdoor seating.

Quarterly state taxes sprout enormous penalties if unpaid or tardy. Service china, flatwear, fire inspections, grease trap service, landscaping, utility bills, snow removal, advertising and linen deliveries are just the tip of the iceberg.

My retirement dream is to convert an Airstream camper into a posh Polish potato pancake mobile and zoom about the village as I please. But certainly not without the benedictions of my fellow culinary neighbors or with a deserving attitude.
